Ingredients

  • 60 g raisins
  • 80 ml rum
  • 200 g softened butter
  • 2 tsp vanilla sugar
  • 200 g sugar
  • 1 pinch salt
  • 1 egg
  • 300 g rolled oats
  • 100 g chopped peeled almond kernels
  • 1 tsp Baking powder
  • 50 g whole almonds

Instructions

    Soak the raisins in rum. Preheat the oven to 180°C (356°F) with upper and lower heat. Line a baking sheet with parchment paper. Cream the butter with vanilla sugar, sugar, and salt. Beat in the egg. Mix the rolled oats with the chopped nuts and baking powder and add to the wet mixture. Combine all into dough or knead.

    Drain the raisins well and fold them with the whole almonds into the dough. Shape small balls from the dough and place them on the prepared baking sheet with a little space between each. Bake for 10-15 minutes until golden yellow. Cool the cookies on a wire rack and serve arranged in bowls.
