Swedish Cookies

A special dessert: Swedish cookies are perfect for gifting, bringing along, and snacking.

Ingredients

  • 400 g flour
  • 125 g sugar
  • 1 pinch salt
  • 250 g butter
  • 1 egg yolk
  • 1 Egg white
  • 100 g sugar
  • 1 tsp ground cinnamon
  • 50 g currant jam

Instructions

    Mix the flour with sugar and salt in a mixing bowl. Cut the butter into the mixture with a pastry cutter, add the egg yolk, and knead everything into a smooth dough.

    Shape the dough into four rolls about 4 cm in diameter and cover; refrigerate for about 1 hour.

    Preheat the oven to 200°C (392°F). Line one or two baking sheets with parchment paper.

    Cut the dough rolls into thin slices about 4 mm thick and place them on the sheet. If desired, cut out shapes from the center of each cookie with letter cutters.

    Whisk the egg white lightly; mix the sugar with cinnamon. Brush the cookies with the egg white and sprinkle with cinnamon sugar. Bake for about 10 minutes until golden brown, remove and cool on a wire rack.

    If desired, warm the currant jam and sandwich two whole cookies together with a little jam.
