Ingredients

  • 250 g flour
  • 50 g sugar
  • 1 packet vanilla sugar
  • 125 g cold butter
  • 1 pinch salt
  • 2 tsp grated orange zest
  • 1 egg
  • 20 g cocoa powder
  • 150 g white couverture chocolate
  • 150 g dark couverture chocolate

    Sift the flour onto a work surface, mix with salt, sugar, vanilla sugar and orange zest, then press a well into the center. Cut the cold butter into small pieces and distribute around the well; add the egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead the mixture by hand into a dough, shape it into a ball, wrap in cling film and refrigerate for about 30 minutes.

    Preheat the oven to 180 °C (356 °F). Roll out portions of the dough between two sheets of plastic wrap to a thickness of about 4 mm. Use appropriate cookie cutters to cut bunny shapes and place them on a baking sheet lined with parchment paper. Bake in the preheated oven for about 10–12 minutes, then remove and let cool. Melt the chocolates separately in a double boiler; dip the cookies into each chocolate and allow them to set on parchment paper. Decorate as desired with the other chocolate (eyes, ears, etc.).
