Easter Cookies

Ingredients
- 300 g flour
- 1 pinch salt
- 100 g sugar
- 1 tsp lemon zest
- 1 egg
- 200 g butter
- flour (for the work surface)
- 250 g powdered sugar
- 2 tbsp lemon juice
- food coloring (e.g., green, blue)

Mix flour with salt, sugar and lemon zest; sift onto a work surface. Create a well in the center, crack the egg into it, and scatter butter pieces around the well. Using a large knife, chop all ingredients into crumbs, then quickly knead by hand into a smooth dough. Shape into a ball, wrap in cling film, and refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F) with upper and lower heat. Roll out the chilled dough on a floured surface to a thickness of 0.5 cm. Cut out various sizes of eggs, hens, or Easter bunnies. Place them on a baking sheet lined with parchment paper and bake in the preheated oven for about 10 minutes. Remove, lift from the sheet, and cool on a wire rack.

Whisk powdered sugar with lemon juice until thick enough to glaze. Stir in different food colors as desired. Decorate the eggs, hens, and bunnies with the glaze and allow them to dry.
