Oat Bran Bread

Ingredients
- 2 tbsp wheat bran
- 3 tbsp oat bran
- 3 tbsp corn starch
- 7 g fresh yeast
- 1 egg
- 50 g low‑fat quark
- 5 tbsp milk (1.5% fat)
- fresh parsley
- dried rosemary
- Salt
Instructions

Grind the wheat bran and oat bran in a blender into flour.

Dissolve the yeast with a pinch of sugar and flour in lukewarm milk; do not use sweetener instead of sugar. Cover with a kitchen towel and leave in a warm place for about 10‑15 minutes.

Beat the egg until frothy, add half to the oat‑bran flour mixture, reserve the rest to brush the loaf later.

Once the yeast has risen, knead it together with the egg and oat‑bran flour into an even dough. Chop the herbs finely and fold them in. Transfer the dough to a loaf pan and cover for another 30 minutes while you preheat the oven to 200 °C.

After about half an hour bake the bread for 15‑20 minutes, brushing it with the remaining egg before baking and sprinkling coarse salt or herbs on top.
