Nut Spice Cake

Ingredients
- 2 cm fresh ginger
- 200 g soft butter
- 100 g honey
- 4 eggs
- 100 g Ground Almonds
- 1 tsp ground vanilla
- 1 tsp ground cinnamon
- a pinch ground cloves
- a pinch cardamom
- 300 g flour (with wheat germ)
- 1 packet baking powder
- 2 tbsp rum
- 200 ml milk
- oil (and breadcrumbs for the pan)
- 150 g powdered sugar
- 3 tbsp orange juice
- 2 tbsp orange liqueur (e.g., Grand Marnier)
- 75 g almond flakes

Preheat the oven to 180 °C. Peel and finely grate the ginger. Whisk butter, honey, and eggs with a hand mixer until frothy. Stir in almonds, vanilla, cinnamon, cloves, ginger, and cardamom. Add flour and baking powder. Finally fold in rum and milk.

Grease a loaf pan and line it with breadcrumbs. Pour the batter into the pan and smooth the top. Bake in a hot oven (convection 160 °C, gas level 2‑3) for about 40 minutes. Remove and let rest briefly in the pan. Then transfer to a rack and allow to cool completely.

For the glaze, mix powdered sugar with orange juice and orange liqueur. Brush the cooled cake with the glaze and sprinkle almond flakes on top. Let the glaze set before serving.
