Banana Fruit Bread
Juicy, sweet and fruity, the banana fruit bread from Spoonsparrow is a delightful treat for a quick bite or on-the-go enjoyment.
Ingredients
- 100 g mixed dried fruit
- 50 g peeled whole hazelnuts
- 50 g peeled whole almonds
- 250 g butter
- 200 g brown sugar
- 1 tbsp beetroot syrup
- 4 eggs
- Salt
- 400 g flour
- a pinch cinnamon powder
- a pinch clove powder
- a pinch cardamom
- 1 packet baking powder
- 100 g ground walnuts
- 150 ml milk
- 2 Bananas
- flour (for dusting)
- butter (for the pan)
Instructions

Soak the dried fruit in rum. Roast the hazelnuts and almonds in a hot, fat-free pan, remove them, and let them cool.

Preheat the oven to 180°C (350°F) with upper and lower heat.

Cream the butter with sugar and syrup, then gradually fold in the eggs with a pinch of salt. Mix the flour with spices, baking powder, and ground walnuts, then alternately stir into the butter mixture with milk. Peel and mash the bananas with a fork, adding them to the batter. Lightly dust the drained dried fruit and nuts with flour, then fold them into the batter.

Pour the batter into a greased loaf pan, smooth the top, and bake in the preheated oven for about 1 hour, checking with a toothpick.

Remove the finished banana fruit bread from the oven, let it cool briefly, release it from the pan, slice, and serve.
