English Fruit Cake

Bake an English fruit cake from Spoonsparrow. The cake always pairs well with a cup of black tea with milk the English way.

Ingredients

  • 3 eggs
  • 50 g maple syrup
  • Salt
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg
  • 1 pinch ground cardamom
  • 1 organic orange zest
  • 150 g Whole wheat flour
  • 1 packet baking powder
  • 50 g chopped almonds
  • 100 g chopped walnuts
  • 125 g dried figs
  • 125 g dried dates
  • 1 piece ginger (2 cm)
  • 100 g currants
  • 100 g seedless raisins
  • flour for dusting

Instructions

    Whisk eggs, maple syrup, spices, orange zest, whole wheat flour and baking powder in a bowl to form a smooth batter. Fold in almonds and chopped walnuts. Dice figs and dates, finely chop ginger, add currants and raisins. Lightly dust everything with flour and incorporate into the batter.

    Pour batter into a loaf tin or cake pan and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 100 minutes. After 50 minutes cover the cake with parchment paper. Remove from the oven, let it cool in the pan for 10 minutes, then unmold and allow to cool completely.
