Ingredients

  • 100 g Soft Butter
  • 50 g whole cane sugar
  • 100 g brown sugar
  • 1 whisked large egg
  • 1 tsp ground vanilla
  • 175 g spelt flour type 630
  • 1 tsp Baking powder
  • 1 tbsp cocoa powder
  • 75 g coarsely chopped walnut kernels

Instructions

    Line baking trays with parchment paper. Beat butter with whole cane sugar and brown sugar until fluffy. Gradually add the egg, then the vanilla. Mix flour, cocoa, and baking powder together and fold gently into the wet mixture. Fold in walnuts.

    Drop small spoonfuls of dough onto the tray, spacing them about 5 cm apart and away from the edges. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 10–12 minutes until the nut cookies are golden brown.

    Let cool on the tray for about 5 minutes, then lift carefully and allow to cool completely.
