Nut Confection

Ingredients
- 80 g peeled hazelnuts
- 120 g peeled almonds
- 3 egg whites
- Salt
- 200 g sugar
- 1 packet vanilla sugar
- 2 tbsp honey
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 8 baking wafers (approx. 10x20 cm)

Coarsely chop the nuts and toast them in a pan without adding fat until they begin to smell fragrant. Remove and let cool.

Beat the egg whites with a pinch of salt until stiff, then gradually whisk in the sugar and vanilla sugar. Place the bowl over a hot, non-boiling water bath and continue beating until a thick, viscous mass forms. Add honey, nuts, and spices; stir and remove from heat. Spread the wafers on a rectangular baking sheet lined with parchment paper and spread the nut‑egg white mixture over them.

Let set slightly, top with remaining wafers, and cool. Carefully press down with a board and let dry completely overnight. Cut the confection into diamonds or rectangles the next day and serve.
