Ingredients

  • 650 ml milk
  • 400 g sugar
  • 2 Cinnamon sticks
  • 2 cloves
  • 2 tsp grated lemon zest
  • 200 g butter
  • 400 g semolina
  • 60 g chopped almonds
  • sugar (for sprinkling)
  • cinnamon (for sprinkling)

Instructions

    Bring the milk with 350 ml water, sugar, cinnamon sticks, cloves and lemon zest to a boil in a pot and let it steep for 5 minutes. Remove the cinnamon sticks and cloves, cover the pot with a lid and take it off the heat. In another pot melt the butter, stir in the semolina and roast under stirring until golden yellow. Add the almonds and continue roasting while stirring until the mixture turns slightly brown.

    Immediately pour in the milk and stir until almost all liquid has been absorbed. Remove from heat, cover the pot with a cloth and let it rest for 15 minutes. Fill into tartlet tins or a pudding mold and cool. Then serve, sprinkle with sugar and cinnamon and, for example, top with strawberry sauce.
