Ingredients

  • 150 g large carrots (1 large carrot)
  • 125 g soft butter
  • 200 g sugar
  • 1 pinch salt
  • 3 eggs (size M)
  • 250 g flour
  • 2 tsp Baking powder
  • 150 g fine oatmeal
  • 5 tbsp milk
  • 1 egg white (M)
  • 200 g powdered sugar
  • food coloring
  • Vienna almond kernels (for garnish)

Instructions

    Peel the carrot and grate finely.

    Cream butter with sugar, salt, and eggs. Mix flour with baking powder and alternately fold in oatmeal and milk. Finally stir in grated carrots.

    Fill the batter into muffin tins lined with paper liners. Bake in a preheated oven at 175°C (gas: level 2, convection: 160°C) for about 35 minutes. Cool muffins on a wire rack.

    Beat egg white until half stiff. Sift powdered sugar and fold in to make a firm glaze. Divide the glaze into small portions and color with food coloring as desired. Brush the muffins with glaze and garnish with Vienna almonds.
