Nut-Choco Cookies

Ingredients
- 200 g Flour
- 100 g ground hazelnuts
- 100 g sugar
- 1 packet vanilla sugar
- 1 lemon zest
- 1 egg
- 200 g cold butter
- 150 g mocha chocolate
- 100 g dark chocolate
- 40 ml strong espresso
- 150 ml whipping cream
- 30 g hazelnut kernels

Gather flour with ground hazelnuts, sugar, vanilla sugar and lemon zest on the work surface. In the middle add the egg. Cut the butter into small pieces and distribute around. Knead all ingredients into a shortcrust dough. Wrap in foil and chill for at least 1 hour. Preheat oven to 180 °C. Line a baking sheet with parchment paper. Dust the work surface with flour and roll out the dough to about 4 mm thickness, then cut squares of about 3.5 × 3.5 cm and place on the prepared sheet. Bake for about 12 minutes until golden‑yellow, remove and cool.

Melt chocolate in a double boiler, stir in espresso and cream, let cool in the fridge. Then whisk well and spread a little of the cream over each cookie before serving, garnishing with one hazelnut kernel per cookie.
