Nut Cake with Dried Fruits

Ingredients
- 300 g dates
- 250 g dried plums
- 120 g butter
- 350 ml boiling water
- 150 g brown sugar
- 2 Eggs
- 1 untreated lemon (zest)
- 0.25 tsp Salt
- 350 g flour
- 2 tsp Baking powder
- 150 g walnuts (coarsely chopped)
- butter (for greasing)
- bread crumbs (for dusting)
- 100 g lingonberry jam
- powdered sugar

Halve the dates and plums, remove pits, and roughly chop the flesh. Grease a springform pan with butter, dust with bread crumbs, flip it, tap on the table so only necessary crumbs remain.

Place dates and plums with butter in a large bowl, pour boiling water over them, stir until butter melts, then let cool.

In another bowl whisk sugar with eggs, lemon zest, and salt. Sift flour and baking powder into the mixture, add walnuts, and mix well. Finally fold in the date-plum mixture. Pour batter evenly into prepared pan, smooth surface, bake at 190°C for about 1 ¼ hours; cover with foil if needed. Test doneness with a skewer.

Let cake cool slightly in pan, then transfer to a wire rack and chill overnight. Slice crosswise, spread jam on cut side, place second layer atop. Before serving, decorate as desired and dust with powdered sugar.
