Ingredients

  • Mehl (for the pan)
  • butter (for the pan)
  • 375 g Crème fraîche
  • 100 g ground walnuts
  • 175 g powdered sugar
  • 75 ml oil
  • 2 Eggs
  • 150 g flour
  • 1 packet baking powder
  • 80 g cranberry jam
  • 40 g apricot jam
  • 300 ml whipping cream
  • 1 Tbsp vanilla sugar
  • 1 packet stabilizer for whipped cream
  • powdered sugar (for dusting)
  • cloudberries (from the jar)

Instructions

    Grease the baking pan with butter and dust it with flour. Preheat the oven to 180°C fan.

    Whisk the crème fraîche in a bowl until smooth. Add walnuts, powdered sugar, oil, and eggs; mix well. Combine flour with baking powder and fold into the cream mixture. Pour batter into the pan and level the surface. Bake for about 40 minutes until golden brown (test with a skewer). Let cool slightly, then remove from the pan, cut across into three strips, and allow to cool completely.

    Warm the jams separately for the filling. Spread two cake strips with the red jam. Spread one strip with the yellow jam. Place a red‑jammed strip in a mold (or back in the pan). Whip the cream with vanilla sugar and stabilizer until stiff. Spread half of the whipped cream on the first cake base. Lay the yellow‑jammed strip (jam side down) on top and spread the remaining cream evenly over it. Finish with the last red‑jammed strip (jam side down). Chill until serving. Before serving, dust the cake with powdered sugar, garnish with cloudberries, cut into pieces, and serve.
