Ingredients

  • 1 lemon
  • 300 g apples
  • 100 g Dried Apricots
  • 125 g raisins
  • 140 g hulled almond kernels
  • 100 g Hazelnuts
  • 2 tbsp honey
  • 1 tsp cinnamon
  • 1 pinch ground cloves
  • 20 ml orange juice
  • 250 g wheat flour
  • 250 g whole wheat flour
  • 1 packet baking powder
  • a pinch salt
  • 1 egg
  • 2 Tbsp condensed milk
  • 6 fresh cherries

Instructions

    Cut the lemon in half and squeeze out the juice. Peel, quarter, remove cores from the apples and grate them roughly; mix immediately with the lemon juice. Roughly cube the apricots. Combine the apples with raisins, almonds (set a few aside for decoration), hazelnuts, apricots, honey, spices, and orange juice, then let sit overnight.

    For the dough, combine the flours, baking powder, and salt; knead into the fruit mixture with the egg. Pour the batter into a loaf pan lined with parchment paper and smooth the top. Brush with condensed milk and arrange cherries and remaining almonds decoratively on top. Bake in a preheated oven at 175 °C (150 °C fan‑forced; gas: level 2) for about one hour, then remove, let cool slightly, turn out of the pan, and allow to cool completely.
