Vegan Banana Chocolate Cake

A vegan banana chocolate cake from Spoonsparrow is always a hit!

Ingredients

  • 250 g spelt flour Type 1050
  • 2 tbsp Soy flour
  • 1 packet baking powder
  • 3 tbsp cocoa powder (45 g; strongly defatted)
  • 50 g raw cane sugar
  • 250 ml soy drink (soy milk)
  • 80 ml rapeseed oil (+ 1 tbsp for greasing)
  • 4 tbsp water
  • 2 Bananas

Instructions

    Combine all dry ingredients in a bowl. Mix all wet ingredients together, then quickly fold in the dry mixture. Peel the bananas, cut them lengthwise into halves, chop into small pieces and fold them in.

    Spread the batter evenly in a greased loaf pan and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 30–40 minutes. Remove from the oven and let it rest in the pan for 10 minutes. Transfer to a wire rack and cool. Slice before serving.
