Oatmeal Walnut Cake

Ingredients
- lemon zest
- 1 apple
- 150 g spelt whole‑grain flour
- 150 g wheat flour
- 1 packet baking powder
- Cinnamon
- Salt
- 250 g lactose‑free butter
- 200 g raw sugar
- 4 eggs
- 1 tbsp ground walnut kernels
- 150 g rolled oats
- 250 ml lactose‑free milk
Instructions

Line a loaf pan (about 25 × 11 cm) with parchment paper.

Zest half a lemon. Peel, quarter, core the apple, grate finely and mix in a bowl with 2 tbsp lemon juice.

Combine spelt and wheat flour with baking powder, cinnamon and salt.

In a mixing bowl beat the butter with raw sugar until fluffy. Add eggs one at a time, then fold in the dry mixture, walnuts, oats and grated apple. Gradually stir in milk until the batter is thick enough to fall off the whisk without breaking apart.

Pour the batter into the prepared pan, smooth the top, and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) on the middle rack for about 50 minutes.
