- 2 egg whites
- a pinch of salt
- 100 g brown sugar
- 200 g walnuts
- 1 tsp instant espresso powder
- a pinch of cinnamon

Preheat the oven to 120°C fan. Line two baking trays with parchment paper. Beat the egg whites with the salt until stiff, then gradually add the sugar and continue beating until the mixture shines. Finely grind the walnuts in a food processor and mix with the espresso powder and cinnamon.

Carefully fold the nut mixture into the meringue. Drop spoonfuls of dough onto the trays using two teaspoons to form elongated shapes. Bake in the preheated oven on the middle rack for about 25 minutes. Turn off the oven and let the macarons dry for about 30 minutes with the door slightly open. Finally, remove them from the tray and allow to cool.
