Noodles with Seafood Ragout

Ingredients
- 300 g wheat flour
- 3 egg yolks
- 1 egg
- Salt
- caper flower
- caper leaf
- 200 g Salmon fillet
- 4 scallops (popped)
- 4 shrimp (peeled, deveined)
- 200 ml fish stock
- 200 ml heavy cream
- pepper (ground)
- 1 tsp saffron (ground)
- Cayenne pepper
- 2 tbsp olive oil
- 20 ml Noilly Prat
- Salt

Knead the dough from the listed ingredients, wrap in plastic and chill for 30 minutes. Then roll it out with a pasta machine. Cover half of the dough strip with caper flowers and leaves, fold the other half over it, and run again through the machine. Cut the sheet into about 3 cm wide strips, dust with flour, and let rest for 30 minutes.

Cut the salmon into 1 cm cubes. Dice the scallop meat as well. Simmer the fish stock with cream and spices (except salt) until thickened.

Sauté the shrimp in hot oil, add scallops and salmon. Stir for a few minutes, deglaze with Noilly Prat, and fold into the fish sauce. Season with salt and pour into deep bowls.

Cook the herb noodles in salted water al dente, drain, and place over the fish ragout. Serve garnished with kale leaves.
