Nudeln mit Bohnen und Pilzen

Ingredients
- 200 g morel
- 2 shallots
- 1 Garlic clove
- 400 g macaroni
- Salt
- 200 g dried fava beans (white beans)
- 3 tbsp olive oil
- 150 ml Vegetable broth
- Pepper
- a pinch of saffron
- ground pimento
- 4 tbsp grated hard cheese (e.g., pecorino)
- ½ handful chives

Clean the morels thoroughly, shaking them to loosen any stones inside and brushing off the exterior with a small brush. Peel and finely dice the shallots and garlic clove. Cook the macaroni in a large pot of boiling salted water until al dente. Add the fava beans during the last 3–4 minutes. Drain both and set aside.

Heat the olive oil in a large skillet over medium heat. Sauté the shallot with the garlic briefly. Add the morels and cook for 3–4 minutes. Pour in the vegetable broth, season with pepper, saffron, and ground pimento. Stir in the beans and pasta, then add the grated cheese and adjust seasoning with salt and pepper. Chop the chives into large pieces, mix in, and serve.
