Foil-Wrapped Potatoes with Herring and Sauce

Ingredients

  • 8 medium new potatoes
  • 250 g sour cream
  • 1 splash Lemon juice
  • Salt
  • Pepper
  • 300 g pickled herring (with onions)
  • 2 tbsp linseed oil
  • 2 tbsp freshly chopped dill

Instructions

    Preheat the oven to 180°C fan.

    Wash the potatoes thoroughly and wrap each in aluminum foil. Prick all around several times with a fork and bake for about 45 minutes.

    Season the sour cream with lemon juice, salt and pepper.

    Remove the potatoes from the foil, cut crosswise, gently separate and place on plates. Top each with slices of herring with onions, drizzle with linseed oil, add the seasoned sour cream and sprinkle with dill before serving.
