The Apple‑Avocado Salad from Spoonsparrow is a fruity alternative to boring leafy salad.

Ingredients

  • 1 Pomegranate
  • 2 tbsp lemon juice
  • 1 tsp Honey
  • 5 tbsp grape seed oil
  • Salt
  • chili flakes
  • 2 Avocados
  • 2 Apples
  • 2 Spring Onions

Instructions

    Halve the pomegranate, remove seeds and collect the juice. For the vinaigrette, whisk together pomegranate juice and seeds with lemon juice, honey and oil, seasoning with salt and chili flakes.

    Halve the avocados, remove pits and cut into thin slices. Peel the apples, quarter them, discard the core and slice the flesh into thin wedges.

    Arrange apple and avocado slices decoratively on four plates. Wash the spring onions, dry, separate the white part for another use, and cut the green into thin strips.

    Scatter the spring onion ribbons over the apple‑avocado salad and drizzle with vinaigrette.
