Ingredients

  • 250 g firm potatoes
  • 100 g green beans
  • Salt
  • 2 Eggs
  • 200 g mixed leaf lettuce (e.g., frisée, romaine)
  • 200 g Cherry tomatoes
  • 1 cucumber
  • 1 small red onion
  • 100 g black olives (pitted)
  • 250 g canned tuna
  • 4 tbsp olive oil
  • 4 tbsp white balsamic vinegar
  • Pepper (freshly ground)
  • a pinch of sugar
  • 1 tsp medium-hot mustard

Instructions

    Wash the potatoes and steam them for about 30 minutes. Let cool, then cut into large pieces. Wash the beans, trim ends, blanch in boiling salted water for about 8 minutes until firm, drain, shock in cold water, and let dry. Boil the eggs for about 10 minutes, cool, peel, and slice.

    Wash, clean, and spin dry the lettuce. Rinse the tomatoes and cucumber. Slice the cucumber lengthwise, scoop out seeds, and cut into rounds. Peel the onion, halve it, and slice thinly into rings. Drain the olives and tuna; break the tuna into chunks.

    Whisk together oil, vinegar, salt, pepper, sugar, and mustard to make a vinaigrette and taste.

    Arrange the salad ingredients decoratively on plates. Drizzle with dressing and serve.

    Serve with baguette if desired.
