Pasta Vegetable Salad with Pomegranate Seeds

Ingredients

  • 200 g pasta (rotelle rigate)
  • 1 Avocado
  • 2 lemons (juice only)
  • 1 small cucumber
  • 0.5 bunch radishes
  • 200 g Cherry tomatoes
  • 50 g lamb's lettuce
  • 1 Pomegranate
  • Salt
  • Pepper (freshly ground)
  • 6 tbsp Olive oil

Instructions

    Cook the pasta in plenty of boiling salted water until al dente, then drain, rinse with cold water and let it dry.

    Peel the avocado, halve it, remove the pit and slice into thin wedges; drizzle immediately with 2 tbsp lemon juice. Wash the cucumber, cut lengthwise in half, scoop out the seeds with a spoon and slice crosswise into thin rounds. Rinse the radishes, trim them and slice thinly. Wash the cherry tomatoes and halve them. Wash the lamb's lettuce, rinse thoroughly and dry by spinning.

    Halve the pomegranate, remove the seeds and discard the membranes. Whisk together remaining lemon juice with olive oil, salt and pepper; toss all salad ingredients in this dressing. Let it rest briefly, then serve on plates.
