Ingredients

  • 20 small waxy sweet potatoes
  • Salt
  • 20 scallion stems
  • 400 g fresh salmon fillet
  • 2 tsp wasabi
  • arugula (for garnish)
  • parsley (for garnish)
  • wasabi paste (for serving)

Instructions

    Peel, wash, and steam the sweet potatoes over boiling salted water until tender (about 20 minutes). Meanwhile, steep the scallion stems in hot water, cool them, and pat dry on a clean kitchen towel. Slice the salmon fillet into 20 pieces.

    Briefly let the sweet potatoes steam again, then pat them dry if needed. Spread a thin layer of wasabi on one side of each salmon piece and hold it in hand. Place a sweet potato slice on top of the wasabi-coated salmon and press lightly. Flip the nigiri over and place it across a scallion stem.

    Tie the ends of the scallion stem together, pointing them upward. Arrange the sushi with the potato side down. Sprinkle with herbs as desired and serve separate wasabi paste on the side.
