Chicken and Red Onion Salad

Ingredients
- 2 romaine lettuce heads
- 2 stalks Parsley
- 2 red onions
- 5 tbsp olive oil
- 2 chicken breast fillets (about 140 g each)
- Salt
- pepper (ground)
- 4 tbsp white balsamic vinegar
- 0.5 tsp Dijon mustard
- 1 pinch sugar
Instructions

Separate the leaves of the romaine lettuce, wash and dry them. Cut 3-4 large leaves into strips and then finely chop. Rinse the parsley, shake dry and finely chop its leaves as well. Mix with the salad. Set aside some large leaves for garnish, tear the rest into smaller pieces.

Peel the onions, slice into rings and separate them. Add 1 tbsp oil to a hot pan and sauté the onion rings for 1-2 minutes until colorless and just slightly soft. Rinse the chicken, pat dry and cube it. Remove the onions from the pan and add another tbsp of oil. Cook the chicken cubes over slightly higher heat, turning them around for 3-4 minutes until golden brown. Set aside and season with salt and pepper.

Whisk together the remaining oil, vinegar, mustard, sugar, salt and pepper. Stir in the salad-parsley mixture and taste.

Distribute the torn salad and whole leaves into four serving bowls. Add the onion rings and chicken cubes on top and drizzle with dressing before serving.
