Ingredients
- 350 g cooked chicken breast fillet
- 8 slices rye toast bread
- 125 g green pesto (pre-made)
- 200 g arugula (salad)
- 2 Eggplants
- 4 tbsp olive oil
- Sea salt
Instructions

Toast the bread slices in a toaster.

Slice the eggplants into even pieces and soak them in salted water for about ½ hour.

Pat the eggplant slices dry on kitchen paper and fry both sides in olive oil. Wash and spin-dry the arugula leaves.

Spread thinly on each toast slice a layer of green pesto, then lay arugula leaves and four eggplant slices.

Alternate layers of chicken breast slices and arugula leaves, then place the top toast slice.
