Ingredients

  • 350 g cooked chicken breast fillet
  • 8 slices rye toast bread
  • 125 g green pesto (pre-made)
  • 200 g arugula (salad)
  • 2 Eggplants
  • 4 tbsp olive oil
  • Sea salt

Instructions

    Toast the bread slices in a toaster.

    Slice the eggplants into even pieces and soak them in salted water for about ½ hour.

    Pat the eggplant slices dry on kitchen paper and fry both sides in olive oil. Wash and spin-dry the arugula leaves.

    Spread thinly on each toast slice a layer of green pesto, then lay arugula leaves and four eggplant slices.

  5. 5.

    Alternate layers of chicken breast slices and arugula leaves, then place the top toast slice.
