Ingredients

  • 3 Brötchen (vom Vortag)
  • 100 g Putenspeck
  • 200 g rote Zwiebeln
  • 0.5 Bund Petersilie
  • 3 EL butter
  • 3 Eier
  • 200 ml Milch (3,5 % Fett)
  • 200 g Schlagsahne (30 % Fett)
  • Salz
  • Pfeffer
  • Muskatnuss

Instructions

    Preheat the oven to 200°C (convection 180°C; gas: level 3). Slice the bread or rolls into thin slices and cut the turkey bacon into strips. Peel the onions and slice them into thin rings. Wash, dry, and roughly chop the parsley.

    Heat 2 EL butter in a pan, fry the turkey bacon and onions for 5 minutes. Stir in the parsley and cook for another 1–2 minutes. In the meantime, whisk together the eggs, milk, and cream. Season with salt, pepper, and nutmeg.
