New Year's Muffin

Ingredients

  • 200 g Flour
  • 100 g fine rolled oats (melting flakes)
  • 0.5 tsp finely grated lemon zest
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1 egg
  • 120 g sugar
  • 50 ml plant oil
  • 2 ripe bananas
  • 2 tbsp lemon juice
  • 120 g buttermilk
  • 150 g whipping cream
  • 70 g colorful chocolate sprinkles
  • 12 chocolate clover leaves

Instructions

    Preheat the oven to 180 °C (conventional heat). Mix flour with oats, lemon zest, baking powder and baking soda. In a large bowl whisk the egg, then stir in oil and sugar. Blend bananas with lemon juice and buttermilk, add to the egg mixture and mix well. Fold the dry ingredients into the wet mixture. Place paper muffin cups into a muffin tin, fill each cup about three‑quarters full, and bake on the middle rack for about 20–25 minutes (check with a toothpick). Remove, let rest briefly, then transfer muffins to a wire rack to cool.

    For the garnish whip the cream until stiff peaks form. Spread a spoonful of whipped cream onto each muffin and decorate with chocolate sprinkles, chocolate clover leaves and a small chimney sweep stick.
