New Year's Berliner

Ingredients
- 500 g flour
- 1 cube yeast
- 200 g lukewarm milk
- 50 g sugar
- 5 egg yolks
- 60 g softened butter
- 1 pinch salt
- 1 tsp grated lemon zest
- flour (for working)
- apricot jam (for filling)
- 1.5 l fat (for frying)
- powdered sugar (for dusting)
Instructions

Dissolve the yeast and sugar in the milk, then mix with flour, egg yolks, butter, salt, and lemon zest using a dough hook until a soft dough forms; knead until it releases from the bowl. Cover and let rise in a warm place until doubled.

On a floured surface, punch down the dough, divide into halves, shape into rolls, cut each roll into six equal pieces, form balls, and let proof for about 30 minutes.

Fry the dough balls in hot fat (about 180 °C) portion by portion, turning once; each side takes roughly 1–2 minutes.

Remove the fried Berliner with a slotted spoon, drain on kitchen paper, let cool slightly. Then use a pastry bag with a long thin tip or a cake filling nozzle to inject jam from the side.

Dust the fresh Berliners with powdered sugar and serve immediately.
