Ingredients

  • 20 g gluten-free yeast
  • 50 g sugar
  • 150 ml lukewarm milk (1.5% fat)
  • 350 g gluten-free flour (-light mix)
  • 50 g butter
  • 3 tbsp sour cream
  • 1 egg
  • zest of 1 lemon
  • 1 tsp salt
  • 1 egg yolk (for brushing)

Instructions

    Stir yeast and sugar with lukewarm milk until foamy, then let rise for about 25 minutes in a warm spot.

    In a pot melt butter over medium heat. Whisk sour cream, egg, sugar, lemon zest, and salt together. Add to the pre-ferment and knead into a smooth dough. Cover and let rest for 20 minutes.

    Shape several small or one large New Year's pretzel on parchment paper. Let rise covered for another 15 minutes, then brush with egg yolk.

    Preheat oven to 180°C (350°F) on the lowest rack. Immediately after placing the tray of pretzels in the oven, pour a glass of water onto the bottom tray to create steam and prevent drying or cracking. Alternatively, place a heat‑proof bowl of water at the base of the oven.
