Ingredients
- 400 g young nettle leaves
- 0.5 tbsp lemon juice
- 1 Shallot
- 2 tbsp chopped parsley
- 2 hard‑boiled eggs
- 5 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp Lemon Juice
- Salt
- Pepper
Instructions

Wash the nettles and pat them dry with lemon juice in a pot. Let them wilt over medium heat, then drain and roughly chop.

Peel and finely dice the shallot. Grate cheese, wash and finely chop parsley. Whisk together oil, vinegar, lemon juice, salt, and pepper to make a vinaigrette.

Combine nettles with onions and parsley, drizzle with vinaigrette, mix well. Distribute onto plates, grate eggs over top and sprinkle.
