Ingredients
- 1 kg borage leaves
- 1 small onion
- 3 Garlic cloves
- 1 EL olive oil
- 150 ml white wine
- 500 ml vegetable broth
- 2 EL heavy cream
- Salt
- Pepper (freshly ground)
- grated Parmesan (optional)

- dill flower
- borage flower

Rinse, wash and cut borage leaves into strips. Dice onion and garlic finely and sauté in olive oil until translucent. Add borage and stir until it breaks down; deglaze with wine and then puree. Pour in hot vegetable broth and simmer for 5 minutes. Season with cream, salt, and pepper, stirring in some parmesan.

Plate on bowls and garnish with arugula, dill flowers, and borage flowers.
