Gluten-free: Steamed millet with dates. Millet is a gluten‑free grain and therefore suitable for those who cannot tolerate sticky proteins.
Ingredients
- 300 g millet
- 85 g dates
- 600 ml Mediterranean vegetable broth
- Salt
- Pepper

Roast the millet in a large pan over medium heat while stirring for a few minutes until it begins to emit an aromatic fragrance; remove and let cool.

Pit the dates and dice them finely.

Add the millet and diced dates to a pot with the vegetable broth and bring to a boil.

Cover and simmer over low heat, stirring occasionally, for 5 minutes. Remove from heat, keep covered, and allow to stand for another 10 minutes to absorb liquid. Season with salt and pepper and serve.
