Ingredients
- 175 g yellow mustard seeds
- 25 brown mustard seeds
- 175 ml white wine vinegar
- 125 ml dry white wine
- 2 shallots
- 2 tbsp truffle oil (or truffle butter)
- 20 g salt
- 1 tsp dried rosemary
- 40 g honey

Grind the mustard seeds in small batches and combine with vinegar and wine in a tall container or blender. Peel and finely chop the shallots. Add truffle oil, salt, rosemary, and honey to the mustard mixture and blend until a thick paste forms.

Leave the mustard uncovered for 4-6 hours, stirring occasionally to promote fermentation. Then transfer to clean screw-top jars and seal. Store in a dark, cool place for at least 3 weeks before using.
