Mustard Sea Bass with Lemon

Ingredients

  • 800 g sea bass fillet (skinless)
  • 4 untreated lemons
  • 60 g grainy mustard
  • a handful of parsley
  • Salt
  • Pepper
  • vegetable oil (for the grill pan)

Instructions

    Rinse and pat dry the sea bass. Cut into 8 roughly equal pieces. Wash the lemons, pat dry, and slice thinly. Lay 2–3 overlapping lemon slices on each fillet and brush with mustard. Rinse parsley, shake dry, and pluck leaves.

    Sprinkle half of the parsley over the mustard. Season fish lightly with salt and pepper and place on the lemon bed. Brush remaining mustard, scatter remaining parsley, and top with leftover lemon slices. Wrap parcels with kitchen twine and lay on a greased grill pan. Grill over high heat for about 10 minutes, turning once carefully.
