Ingredients
- 4 small dentex
- Salt
- pepper (ground)
- 1 lemon
- 2 tsp chopped thyme
- 1 tsp chopped rosemary
- 2 tbsp chopped parsley
- 2 Garlic cloves
- 150 g herb butter (homemade or store-bought)
- 4 tomatoes
- 6 tbsp Olive oil
- 2 fennel bulbs

Preheat the oven to 180°C.

Wash and pat dry the fish. Rub with salt and pepper. Squeeze lemon juice over the fish. Peel, finely chop garlic and mix with herbs and 2 tbsp soft herb butter. Spread mixture into the fish cavities. Wash tomatoes and fennel, slice them.

Brush four large pieces of foil with a little butter and wrap each fish with vegetables tightly. Place side by side on a baking tray and bake for about 35 minutes. Serve with remaining herb butter.
