Mushrooms with Zucchini Filling

Ingredients

  • 12 large mushrooms
  • 1 small zucchini
  • 2 Spring Onions
  • 40 g parmesan (1 piece)
  • 2 tsp butter
  • Salt
  • Pepper

Instructions

    Rub mushrooms with kitchen paper, remove stems and finely chop them.

  2. 2.

    Wash, peel and grate the zucchini. Wash, peel and slice the white and light green parts of the spring onions into thin rings. Grate the parmesan.

    Heat 1 tsp butter in a pan. Cook the chopped mushroom stems, zucchini shreds and spring onions for about 8 minutes over medium heat, stirring occasionally. Season with salt and pepper and stir in the parmesan.

    Fill the mushroom caps with the vegetable mixture. Butter a baking dish, place the filled mushrooms in it and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 15 minutes.
