Stir-Fried Water Spinach

Stir-fried water spinach: a side dish for fish or poultry. The main advantages of water spinach are its low calorie content and high protein richness.
Ingredients
- 2 tbsp yellow bean paste
- 1.5 tbsp Thai fish sauce
- 1 tsp liquid honey
- 600 g water spinach
- 2 Garlic cloves
- 3 shallots
- 1 tbsp Rapeseed Oil

In a bowl whisk the bean paste with 2 tbsp water, fish sauce and honey.

Clean, rinse, dry shake the water spinach and cut into about 4 cm long pieces.

Peel the garlic cloves and finely chop. Peel the shallots and dice finely.

Heat the wok until hot. Add oil and spread it by swirling. Add the water spinach and stir constantly for about 1 minute until it wilts. Add the garlic and shallots and cook briefly with them.

Stir in the seasoning sauce and continue cooking while stirring for another 30 seconds to finish.
