Roasted Bell Peppers with Goat Cheese

- 4 large red bell pepper halves
- 1 bulb fennel
- 1 roll of goat cheese
- olive oil (cold‑pressed)
- Salt
- freshly ground pepper

Turn on the oven grill. Wash the bell pepper halves, cut them in half and remove seeds. Wash the fennel and optionally slice it with the greens into thin strips. Place the peppers cut side down on the oven rack and add the fennel strips. Grill the vegetables for about 5-6 minutes, turning once. Meanwhile, slice the goat cheese.

Place the grilled vegetables in a bowl (do not turn off the grill yet) and mix with 3–4 tablespoons olive oil, salt, and plenty of pepper. Then lay the pepper halves on a baking sheet, distribute fennel strips among them, and top each half with 1–2 slices of goat cheese. Slide the tray under the hot oven grill and let the cheese melt, then immediately remove from the oven and serve.
