Mushroom Temaki Sushi

Ingredients
- 250 g mixed mushrooms (oyster, shiitake, button… )
- 4 thin spring onions
- 2 tbsp butter
- 1 tsp soy sauce
- Salt
- Pepper (freshly ground)
- 2 tsp lemon juice
- 200 g prepared sushi rice
- 2 roasted nori sheets
- 1 tsp wasabi paste
Instructions

Clean the mushrooms and slice them. Wash and trim the spring onions, cutting the green parts into about 5 cm long strips (use the remaining onion elsewhere). Quickly brown the mushrooms in hot butter in a pan, seasoning with salt, pepper, lemon juice and soy sauce.

Cut the nori sheets crosswise in half. Form four balls from the rice.

Shape the nori sheets into temaki‑sushi cones using the rice, wasabi paste, mushrooms and spring onion strips.
