Mushroom Salad with Garlic, Zucchini and Feta

This mushroom salad with garlic, zucchini and feta from Spoonsparrow is not only delicious for dinner!

Ingredients

  • 600 g mixed fresh mushrooms (chanterelles, button mushrooms, porcini)
  • 2 zucchinis
  • 3 red garlic cloves
  • 1 Shallot
  • 3 spring onions
  • 1 bunch chives
  • 2 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • Salt
  • black pepper (freshly ground)
  • 200 g diced feta

Instructions

    Clean the mushrooms and slice them into rounds or pieces. Wash, trim and halve the zucchinis, then slice them thinly. Peel the garlic and shallot and finely dice them. Rinse the spring onions and chives, shake off excess water and cut into rings or rolls.

    Heat the oil in a pan and sauté the mushrooms for 3–4 minutes while stirring. Add the zucchini, shallot, garlic and spring onions and cook briefly together. Remove from heat and let cool slightly. Mix the vinegar with the chives, season with salt and pepper, then combine with the diced feta and fold into the salad. Serve warm.
