Sweet Potato, Red Onion and Spinach Salad

A salad made from sweet potatoes, red onions and spinach is a simple after-work recipe. Easy and quick to prepare with many healthy ingredients.

Ingredients

  • 4 slices turkey bacon
  • 2 red onions
  • 8 garlic cloves
  • 800 g sweet potatoes
  • oil (for the tray)
  • Salt
  • ground pepper
  • olive oil (to drizzle)
  • 150 g fresh young spinach leaves
  • 200 g canned chickpeas
  • 2 tbsp light balsamic vinegar
  • 4 tbsp olive oil

Instructions

    Preheat the oven to 200°C (400°F).

    Cut the bacon into strips. Peel and slice the onions into wedges. Peel and lightly crush the garlic cloves. Peel, wash and cut the sweet potatoes into large pieces, then mix them with the onions, garlic and bacon; spread on an oiled baking sheet. Season with salt and pepper, drizzle with olive oil, and bake in the preheated oven, turning occasionally, for 20–25 minutes until golden brown.

    Meanwhile, rinse, dry and spin the spinach leaves.

    Drain the chickpeas under a sieve.

    Whisk together the vinegar and oil for the vinaigrette; season with salt and pepper to taste.

    Remove the roasted vegetables from the oven, let them cool slightly, then combine with the chickpeas and spinach. Plate and drizzle with the vinaigrette before serving.
