Mediterranean Cauliflower Salad with Cheese

Ingredients
- 600 g cauliflower
- 1 yellow bell pepper
- 80 g green olives (pitted)
- 2 tbsp capers
- 1 tbsp freshly chopped parsley
- 2 tbsp Apple cider vinegar
- 2 tbsp lemon juice
- Salt
- ground black pepper
- a pinch chili powder
- a pinch sugar
- 2 tbsp grape seed oil
- 150 g hard goat cheese

Wash the cauliflower and divide into florets. Peel the stems and dice them small. Place the cauliflower in a steamer basket and steam in a covered pot for about 8 minutes until al dente.

Wash, trim, and slice the bell pepper into strips. Drain the olives and cut them into rings. Drain the capers and whisk them with parsley, vinegar, lemon juice, salt, pepper, chili powder, and sugar in a bowl. Whisk in the oil and taste for seasoning.

Combine the cauliflower, pepper, and dressing; let it marinate for at least 30 minutes.

Cube the goat cheese and fold it into the salad. Taste again and serve with a slice of whole‑grain bread if desired.
