Ingredients
- 1 l poultry stock
- 40 ml sherry
- 500 g mixed mushrooms (e.g., chanterelles, shiitake, button mushrooms)
- 3 tbsp oil
- 1 Garlic clove
- 2 yellow bell peppers
- 2 tbsp chopped chives
- Salt
- ground pepper
Instructions

Clean the mushrooms thoroughly and cut them in half or slice as desired.

Peel and finely chop the garlic.

Peel, halve, clean, and thinly slice the bell peppers.

Bring the poultry stock with sherry to a boil.

Sauté the mushrooms in hot oil in batches, then add them all to the soup. Add the pepper strips and simmer together for about 2–3 minutes. Season with salt and pepper, sprinkle with chives, and serve.
