Ingredients

  • 50 g chocolate (shaved)
  • 1 Banana
  • 2 tbsp lemon juice
  • 4 tbsp oil
  • 2 Eggs
  • 70 g sugar
  • 6 tbsp buttermilk
  • 250 g flour
  • 0.5 packet Baking powder
  • 200 g powdered sugar
  • 2 tbsp lemon juice
  • 2 tsp cocoa powder
  • 1 muffin tin with 12 cavities; (or 24 paper liners)

Instructions

    Peel the banana, finely mash it with a fork and mix in lemon juice.

    Whisk eggs with sugar, oil and buttermilk until frothy. Fold in banana mixture. Combine flour with baking powder and briefly stir in chocolate until all dry ingredients are moist.

    Grease the muffin tin (or insert two paper liners into each cavity).

    Fill the cavities with batter and bake in a preheated oven at 200°C (middle rack) for about 20 minutes.

    Remove and let cool. Whisk powdered sugar with lemon juice to a thick consistency. Take about 2 tsp, darken with cocoa, and spread generously over the muffins. Place brown glaze into a small plastic bag, cut a tiny corner, spray rings onto the muffins, then use a toothpick to create spider‑web patterns outward and let dry.
