Motiv Cake with Motocross Rider

Ingredients
- 200 g dark chocolate
- 9 Eggs
- 250 g soft butter
- 220 g sugar
- Salt
- 250 g flour
- 2 tbsp Cornstarch
- 200 g gooseberry jam
- 200 g dark chocolate couverture
- 100 g milk chocolate couverture
- 125 g whipping cream (min. 30% fat)

- red gummy candy (or edible paper)
- green gummy string

Preheat the oven to 180°C (350°F) with upper and lower heat. Line a large and a small springform pan (24 cm and 20 cm diameter) with parchment paper on the bottom.

For the batter, roughly chop the chocolate and melt it over a hot, non-boiling water bath. Separate the eggs. Beat the egg whites with a pinch of salt and 50 g sugar until stiff peaks form. Cream the butter with the sugar, gradually fold in the yolks, then beat the mixture very fluffy. Gradually stir in the cooled melted chocolate. Mix flour with cornstarch and fold into the chocolate foam together with the beaten egg whites. Pour two thirds of the batter into the large pan and the rest into the smaller one. Bake on the middle rack for about 30 minutes (small cake) or 45-50 minutes (large pan), checking with a toothpick. Remove, cool briefly, release from pans and let cool completely on a wire rack.

Warm the gooseberry jam slightly. Cut each cooled cake vertically once so that about one third of each is removed. Stack the cake layers tiered, using the jam as glue. Brush the outer tiers with warm jam and allow to dry.

For the glaze, roughly chop both couvertures and melt them with the cream in a pot. Remove from heat, let cool slightly, then coat the entire cake.

Decorate: insert two cracker sticks as goal posts into the cake and place pieces of cracker as lane markers on the still-soft glaze. Sprinkle chocolate pops and small gingerbread as pebbles and rocks on the glaze. Scatter grated chocolate as "dirt" on the tiers. Optionally create flag poles from salt sticks and red gummy candy or edible paper, insert them into the cake, and decorate with green gummy string grass bushes. Finally place the motocross rider figurine on top.
