Small Chocolate Nut Cake

Ingredients
- 50 g whole milk chocolate
- 2 tbsp chopped almond kernels
- 125 g butter
- butter (for the glasses)
- bread crumbs (for the glasses)
- 125 g flour
- 0.5 tsp Baking powder
- 0.5 tsp cinnamon
- 2 Eggs
- 30 g sugar
- 1 Tbsp vanilla sugar
- 80 g brown sugar
- 60 ml apple juice

Chop the chocolate into small pieces and mix with the almonds. Melt the butter in a small saucepan.

Preheat the oven to 200°C (Oven + fan). Grease the glasses with butter and dust them with breadcrumbs.

Whisk the flour with baking powder and cinnamon. Separate the eggs; beat the egg whites with sugar and vanilla sugar into stiff peaks. Beat the yolks with brown sugar until creamy. Stir in apple juice and melted butter. Quickly fold in the dry mixture and then fold in the chocolate‑almond mix. Gently fold the beaten egg whites into the batter and distribute it among the glasses, filling them about two‑thirds full.

Bake on a middle rack for about 30 minutes (test with a toothpick). Remove, seal immediately, and let the cakes cool completely.
