- 600 g muskmelon pumpkin
- 150 g small shallots
- 1 Garlic clove
- 200 g mushrooms
- 250 g tomatoes
- 1 stalk sage
- 2 tbsp olive oil
- 150 ml Vegetable broth
- Salt
- Pepper (freshly ground)

Peel the pumpkin, remove seeds and fibers, and dice the flesh into small cubes. Peel the shallots and garlic; slice the shallots into half-moons and finely mince the garlic. Clean and quarter the mushrooms. Blanch the tomatoes, shock them in ice water, peel, quarter, core, and cube the flesh.

Wash the sage, shake dry, pluck the leaves, and cut into thin strips. Heat oil in a pan and sauté shallots, garlic, mushrooms, and pumpkin for 3-4 minutes while stirring occasionally. Deglaze with broth, add tomatoes, pumpkin seeds, and sage; stir and cook over medium heat for 15-20 minutes. Season to taste and serve plated from the pan.
